Professor Burdge is Professor of Nutritional Biochemistry in the Faculty of Medicine at the University of Southampton, UK. His main research interest is polyunsaturated fatty acids (PUFAs). 

His current research activities are polyunsaturated fatty acid metabolism in T lymphocytes, and the application of novel sustainable seed oils from genetically modified plants that produce fish oil-type omega-3 PUFAs for human consumption and health benefit. Professor Burdge has published over 130 peer reviewed articles as well as chapters in academic books, and briefing documents and reports to the UK government. He is Editor-In-Chief of The American Oil Chemists Society’s journal Lipids.
